Zesty pomegranate chicken

- 1 whole or cut up chicken
- ½ cup orange juice
- 1 Tbsp honey
- 4 cloves garlic; crushed
- ½ tsp salt
- ¼ tsp black pepper
- 1 orange; sliced (you can use any variety)
- 1 grapefruit; sliced (you can switch it out for orange)
- 1 lemon; sliced
- Fresh thyme
- ½ cup Pomegranate arils for garnish
- Chopped parsley for garnish
Instructions
- Preheat your oven to 425°F.
- Place the chicken and sliced citrus in a large roasting pan.
