Ingredients

  • 1 whole or cut up chicken
  • ½ cup orange juice
  • 1 Tbsp honey
  • 4 cloves garlic; crushed
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 orange; sliced (you can use any variety)
  • 1 grapefruit; sliced (you can switch it out for orange)
  • 1 lemon; sliced
  • Fresh thyme
  • ½ cup Pomegranate arils for garnish
  • Chopped parsley for garnish

Instructions

  • Preheat your oven to 425°F.
  • Place the chicken and sliced citrus in a large roasting pan.
  • In a small bowl, mix together the orange juice, honey, crushed garlic, salt, and black pepper. Pour the mixture over the chicken and citrus in the roasting pan, making sure to coat the chicken evenly.
  • Sprinkle some fresh thyme over the chicken, then cover the roasting pan.
  • Place the roasting pan in the preheated oven and bake for 40 minutes.
  • After 40 minutes, uncover the roasting pan and continue baking for an additional 50-60 minutes, until the skin is sticky, golden brown, and the internal temperature of the chicken is 165°F.
  • Once the chicken is fully cooked, remove it from the oven and let it rest for a few minutes.
  • Before serving, top the chicken with fresh pomegranate arils and chopped parsley for added color and flavor.
