I just purchased the dry starter and am in the process of activating it, would like to know how long it takes, and does it make sense that its a dough texture on the second day?

Generally it takes 2-4 days depending on the ambient and flour you use… Yes the second day it may look a little more stiff but the texture should change by the third day.
