- 2 Tbs oil
- 1 large onion diced
- 4 carrots diced
- 4 stalk celery diced
- 2 potatoes diced
- 1 sweet potato diced
- 1 14 oz can diced tomatoes
- 1.5 lb ground beef
- 1 Tbs salt
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 4-6 cups water
Instructions
- To a pot, add oil, onions, carrots, and celery. Sauté for a few minutes.
- Add potatoes, sweet potatoes, diced tomatoes, and spices. Mix well and cook for 5-8 minutes.
- Add ground beef, break it up, mix and cook for an additional 8-10 minutes. Cover with water, bring to a boil and cook on medium heat for 40 minutes Or, set instant pot to 15 minutes on high pressure.
- Serve with fresh herbs and avocado.
