This delicious Burger Soup recipe is perfect for busy weeknights, providing a nourishing and flavorful meal that can be made in just 15 minutes on the stovetop or in an instant pot. With the added bonus of being a one-pot meal, there's less clean up, making it the perfect solution for busy working moms.

Ingredients

  • 2 Tbs oil
  • 1 large onion diced
  • 4 carrots diced
  • 4 stalk celery diced
  • 2 potatoes diced
  • 1 sweet potato diced
  • 1 14 oz can diced tomatoes
  • 1.5 lb ground beef
  • 1 Tbs salt
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 4-6 cups water

Instructions

  • To a pot, add oil, onions, carrots, and celery. Sauté for a few minutes.
  • Add potatoes, sweet potatoes, diced tomatoes, and spices. Mix well and cook for 5-8 minutes.
  • Add ground beef, break it up, mix and cook for an additional 8-10 minutes. Cover with water, bring to a boil and cook on medium heat for 40 minutes Or, set instant pot to 15 minutes on high pressure.
  • Serve with fresh herbs and avocado.
