Ingredients

  • 2 lb ground beef
  • 2 eggs
  • ¼ cup packed herbs (parsley and cilantro)
  • 3 Tbsp chopped scallions
  • 4 cloves garlic, crushed
  • 2 Tbsp coconut aminos
  • ¼ tsp ginger
  • ¼ tsp Chinese five spice
  • 1 Tbsp salt
  • 1 cup apricot preserves (no sugar added)
  • 1 cup water
  • ½ cup coconut aminos
  • 2 Tbsp rice vinegar or mirin
  • 2 Tbsp toasted sesame oil
  • 3 Tbs mustard
  • 1 tsp salt

Instructions

  • In a large bowl, mix the ground beef, eggs, herbs, scallions, garlic, coconut aminos, ginger, Chinese five spice, and salt until well combined.
  • Form small patties with the meatball mixture.
  • Heat a skillet over medium heat and add 2 Tbsp oil. Fry the patties until browned on both sides and cooked through, about 18-20 minutes.
  • While the patties are cooking, prepare the sauce by combining all the sauce ingredients in a saucepan and cooking over medium heat for 5 minutes.
  • Once the patties are cooked, pour the sauce over them and garnish with toasted sesame seeds and scallions.
  • Serve over mashed potatoes or rice.

Notes

These meatballs can be served as a main dish for dinner or as a smaller appetizer. If you don't want to fry the meatballs, you can also bake them in the oven for 25-30 minutes at 375°F. For a healthier option, look for a sugar-free apricot jam to use in the sauce. Serve these delicious meatballs over mashed potatoes or rice and garnish with toasted sesame seeds and scallions.
*Note: Chinese Five Spice is a blend of five different spices, typically including cinnamon, star anise, fennel seed, cloves, and Szechuan peppercorns. It adds a delicious depth of flavor to the meatballs and can be found in most grocery stores or online.
 
Freezing and Storing Instructions:
These Asian Meatballs freeze well, and you can store them in the freezer for up to 2 months. To defrost, place the meatballs in the refrigerator overnight and then bake them in the oven at 300°F until fully defrosted and heated through. Make sure to fully cover the meatballs with foil to keep them from drying out.
